Cobb Hill Cheeses
Ascutney Mountain, our prize winning cheese, is an alpine-style natural rind cheese. It was developed from a Swiss Appenzeller recipe. Ascutney Mountain has a sweet nutty flavor and is aged 7 to 8 months.
Four Corners is based on a Welsh Caerphilly cheddar recipe. It has a natural rind and is aged 2 ½ to 4 months and has a buttery tangy flavor.
Both of these cheeses are made from raw milk that comes from pastured jersey cows that are bred and raised here at Cobb Hill by our dairy enterprise partners Cedar Mountain Farm. From May to September the herd grazes on pasture maintained without artificial pesticides or fertilizers. During the non-pasture season the Jerseys eat grain as well as hay from our own fields and neighboring farms.
